Secret Stash: Sidama Cold Ferment
Our cupping table standout this month. Sidama is one of Ethiopia’s three trademarked coffee regions. Its highlands that climb past 2,000 meters ripen cherries slowly. Farms here average under a hectare, so each lot is built from many small harvests. This lot is 74158, one of the region’s most common varieties. It is then processed as a natural with a cold ferment, where coffee cherries rest in the cold before drying, slowing fermentation. Floral, fruity, and just the right amount of sweetness all throughout.
