Dararo Natural
At 1,800 to 2,400 meters above sea level, coffees from Southern Ethiopia's Yirgacheffe district are some of the most admired origins in the world. Yirgacheffe’s high-elevation landscape and centuries-old tradition of coffee cultivation allow these 25 smallholder producers from the Dararo cooperative to showcase these expressive and memorable heirloom beans.
This lot is composed of Ethiopian heirloom varietals processed naturally so the sugars and aromatics of the fruit have time to infuse deeply. Roasted for filter, Dararo Natural is most rewarding as a pour-over where you can distinguish its lemongrass sweetness and cool mint finish. Each cup has a distinct and pleasant body with low acidity, resulting in a brew that is both sharp and beautifully complex.
